Chocolate Chip Peanut Butter Cookies

INGREDIENTS
  • ½ cup softened Unsalted Butter
  • ¾ cup no salt or sugar Creamy Peanut Butter
  • ¼ cup Granulated Sugar
  • ¾ cup packed Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • ¾ cup Millet Flour
  • ¼ cup Tapioca Flour
  • ½ tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ tsp Salt
  • 1 cup Semi-Sweet Chocolate Chips
INSTRUCTIONS
  • Combine butter, peanut butter, brown and white sugar.
  • In a separate bowl beat eggs and vanilla. Add to butter and sugar mixture. Beat mixture until well combined. Set aside.
  • In a separate bowl, whisk together flours, baking soda, baking powder and salt.
  • Add the moist ingredients to the dry ingredients. Mix until thoroughly combined.
  • Stir in chocolate chips. Cover and refrigerate cookie dough for 30 minutes.
  • Preheat oven to 350℉.
  • Prepare a baking sheet with parchment lining.
  • Remove chilled dough from refrigerator.
  • Drop 1 tablespoon of dough onto baking sheet.
  • Bake for 12-15 minutes, or until the edges begin to brown.
  • Allow cookies to cool 5 minutes before removing.
  • Makes 24 cookies. Store in cool place.

Dark Chocolate Brownies Recipe

INGREDIENTS
  • 1 1/2 Cups Dark Chocolate Pieces
  • 3/4 Cup Unsalted Butter
  • 1/2 Cup Sugar
  • 2/3 Cup Cocoa Powder
  • 1/3 Cup Brown Rice Flour
  • 1 Teaspoon Baking Soda
  • 1/8 Teaspoon Salt
  • 3 Eggs
  • 2 Teaspoons Vanilla Extract
INSTRUCTIONS
  • Preheat oven to 350 degrees F.
  • Prepare an 8 x 8 inch baking pan with cooking oil. Set aside.
  • Place 1 cup chocolate pieces, butter, and sugar in a small pan over a low flame. Continue to stir until chocolate is melted and the mixture is smooth.
  • Remove from stove, and allow to cool. Set aside.
  • In a separate bowl, combine dry ingredients and remaining chocolate pieces. Set aside.
  • Add eggs and vanilla extract to the cooled chocolate mixture. Whisk together.
  • Combine the dry ingredient mixture into the moist mixture. Stir well so that there are no streaks of flour.
  • Pour batter into prepared oiled pan. Bake for 30-35 minutes.
  • Remove from oven and allow to cool well before slicing.
  • Suggested Toppings: Vanilla Ice Cream, Greek Yogurt, Fresh Strawberries

Moist Almond Cake

INGREDIENTS
  • 3/4 Cup Unsalted Butter
  • 1 Cup Sugar
  • 4 Eggs
  • 1/2 Cup Milk
  • 1 Teaspoon Vanilla
  • 1 1/2 Cups Almond Flour
  • 1/2 Cup Coconut Flour
  • 1/4 Teaspoon Salt
  • 2 Teaspoons Baking Powder
INSTRUCTIONS
  • Preheat oven to 350 degrees F.
  • Combine butter and sugar until creamy. Set aside.
  • In a separate bowl, beat eggs until fully blended.
  • Combine milk, eggs and vanilla. Mix well until smooth.
  • Add mixture to butter and sugar. Combine well. Set aside.
  • In a separate bowl, combine almond flour, coconut flour, baking powder and salt.
  • Stir moist ingredients into dry ingredients. Combine mixture until well blended and creamy.
  • Oil a 9 x 13 inch cake pan.
  • Spread batter in cake pan. Bake for 30 minutes.
  • Top with fresh strawberries, blueberries, whipped cream, yogurt or other favorite topping.

Banana-Berry Smoothie Recipe

Banana-Berry Smoothie

INGREDIENTS
  • 1 Ripe Banana Sliced Small
  • 1/2 Cup Raspberries
  • 1/4 Cup Blueberries
  • 1 – 1/2 Teaspoons Honey
  • 1/8 Teaspoon Ground Cinnamon
  • 1/2 Cup Unsweetened Apple Juice
  • 1/2 Cup Ice
INSTRUCTIONS
  • Place fruit in a blender. Pulse until fruit is chopped, and smooth.
  • Add cinnamon, and apple Juice.  Blend together
  •  Add ice. Blend well.
  • Serve immediately.
