Easy Corn Bread Recipe

Ready In Less Than A Half Hour

Cooking Tools: 2 Medium Size Mixing Bowls, Medium Size Cake Pan

INGREDIENTS

  • 1 cup corn meal
  • 1 cup whole wheat flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup wheat germ
  • 1 large egg beaten
  • 1/4 cup oil
  • 1 cup milk plus 1 tablespoon honey

INSTRUCTIONS

  • Mix dry ingredients. Set aside.
  • Combine moist ingredients in another bowl.
  • Stir moist ingredients into the dry ingredients. Combine well with spoon or fork.
  • Oil round cake pan. Pour batter into pan.
  • Bake at 425 degrees for 20 to 25 minutes.

Mix Entire Recipe Into One Bowl

Cooking Tools: Large Mixing Bowl, Standard Loaf Pan

INGREDIENTS

  • 2 cups finely chopped apples unpeeled
  • 1/2 cup soft butter
  • 2/3 cups honey or maple syrup
  • 2 eggs beaten
  • 1 teaspoon vanilla
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Optional: walnut pieces for topping.

INSTRUCTIONS

  • Mix together dry ingredients in a large bowl.
  • Add remainder ingredients to dry mixture. Combine well.
  • Fold apples into dry mixture.
  • Oil loaf pan, or line with parchment paper.
  • Pour batter into loaf pan.
  • Optional topping: walnut pieces.
  • Set oven at 325 degrees. Bake for 60 minutes.
  • Recipe makes 1 loaf.

Chicken Salad With Apples Recipe

Cooking Tools: Medium Mixing Bowl, Food Processor

INGREDIENTS

  • 2 chopped red apples 
  • 2 diced celery stalks 
  • 2 cups chopped cooked skinless chicken
  • 1/2 cup mayonnaise
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • lettuce leaves, any variety
  • Optional: 1/2 cup raisins, alfalfa sprouts

INSTRUCTIONS

  • Cut apples in quarters. Remove core and chop into bite-size pieces.
  • Either chop the chicken with a knife, or use a food processor.
  • In a medium bowl, mix all ingredients, except lettuce and sprouts.
  • Arrange lettuce leaves on serving plates.
  • Spoon chicken salad onto lettuce leaves.
  • Add optional alfalfa sprouts as a topping over the chicken salad.
  • Serve with rustic bread.
  • Makes 4 servings
  • Refrigerate leftovers.
