INGREDIENTS
- 1 cup rinsed lentils
- 1/3 cup barley
- 6 cups water or vegetable stock
- 1 chopped onion
- 2 pressed or crushed garlic cloves
- 2 sliced carrots
- 2 sliced celery stalks
- 1/2 teaspoon dry oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 1/8 to 1/4 teaspoon red pepper flakes
- 1/2 to 1 teaspoon salt
INSTRUCTIONS
- Place all ingredients except salt into a large pot and bring to a simmer. Cover and cook, stirring occasionally, until the barley is soft, and lentils are tender (about 1 hour).
- Add salt to taste.
- Serves 8
