- 1 block extra firm tofu well drained
- 1/2 teaspoon cumin
- 2 teaspoons tumeric
- 1 teaspoon black pepper
- 1 teaspoon lemon juice
- 1/4 cup mustard
- 1/2 cup mayonnaise
- 3 1/2 tablespoons nutritional yeast
- 1/2 cup diced celery
- 1 cup diced scallions, or onions
- Break the tofu into a mixing bowl.
- Add remaining ingredients.
- Combine mixture until the consistency resembles egg salad.
- Serve on sliced bread, or on lettuce. Add sprouts, tomatoes, or diced bell pepper.
