Tofu Egg Salad Recipe

INGREDIENTS

  • 1 block extra firm tofu well drained
  • 1/2 teaspoon cumin
  • 2 teaspoons tumeric
  • 1 teaspoon black pepper
  • 1 teaspoon lemon juice
  • 1/4 cup mustard
  • 1/2 cup mayonnaise
  • 3 1/2 tablespoons nutritional yeast
  • 1/2 cup diced celery
  • 1 cup diced scallions, or onions
INSTRUCTIONS
  • Break the tofu into a mixing bowl.
  • Add remaining ingredients.
  • Combine mixture until the consistency resembles egg salad.
  • Serve on sliced bread, or on lettuce. Add sprouts, tomatoes, or diced bell pepper.
